One Pot Meals : A Blessing
One pot meals are blessings, don't you agree? There are days where i can cook a storm but also days where i don't have the mood to even enter the kitchen. But as a mom of 2 boys (3, if i count my hubby) lunches to be packed by 6 am, you don't have a choice. On those dull days, quick and easy one pot meals are super handy.
Today's recipe of Mixed vegetable pulav is one such quick and easy meal idea. It is easy to make, gets done in 20 minutes, excluding the soaking time of the rice. This tricolor pulav can be made in Instant pot, dump and cook and it stays warm till you serve it.
This colorful sattvic pulao would make a great dish for get togethers . They can be made for a crowd easily. You can also make it ahead and warm it just before serving.

Ingredients for One Pot Vegetable Pilaf
- Rice : I have used basmati rice to make this one pot pulao.
- Vegetables : i have used store bought frozen mixed vegetables for this colorful pulao.
- Spices : Since i wanted to retain the white color for the tricolor pulao, i have used whole spices in the pulao. Green and black cardamom, cloves, black peppercorns, cumin seeds and fennel seeds along with star anise and cinnamon stick are used in this flavorsome pulao.
- Garnish : A handful of fresh mint leaves and coriander leaves are added to make this tricolor pulao aromatic.
How to make No onion, No garlic Vegetable Pulav

- Wash and soak basmati rice for 15-20 minutes in water. To make this pulao in open pan, heat oil and thrown in all the whole spices along with chilies and ginger.
- Sauté it for a minute, then add the mixed vegetables and sauté for another minute.
- Now add the drained basmati rice to this and mix well. Sauté for a minute.
- Now to this add required amount of water, salt and lemon juice. Cover and cook for 15-20 minutes until the rice is nicely cooked.
- Open, check the doneness of the rice. Garnish it with mint leaves and coriander leaves.
- To make the same mixed vegetable pulao in Instant pot. Switch on the IP in saute mode. Add oil, when hot, thrown in all the whole spices along with chilies and ginger.
- Sauté it for a minute, then add the mixed vegetables and sauté for another minute.
- Now add the drained basmati rice to this and mix well. Saute for a minute.
- Now to this add required amount of water, salt and lemon juice. Add mint leaves on top. Cancel sauté mode, turn on pressure cook and set timer for 3 minutes.
- Once done, let it release pressure naturally for 6-7 minutes, then do a quick pressure release. Open the pot, fluff up the rice, garnish with coriander leaves.
- Serve the colorful vegetable pulao warm with a side of yogurt and crisp.
What to Serve with Vegetable Puloa
One pot meals like this tricolor pulao tastes delish with a simple raita. At home we prefer Coriander mint raita or simple boondi raita.
If you are making kuska biriyani, which is plain biriyani without any vegetables, then this colorful mixed vegetable raita will be the best combo.

Mixed Vegetable Pulao | Instant Pot & Open Pot Recipe
Equipment
- Instant Pot
- Heavy bottom pan with lid
Ingredients
- 1 cup basmati rice
- 1 cup mixed vegetables I have used frozen (carrots, green peas and beans)
- 3 green chilies chopped fine
- ½ teaspoon minced ginger
- ¼ inch cinnamon stick
- 1 teaspoon salt or to taste
- 1 tablespoon oil
- 1 tablespoon ghee if vegan substitute accordingly
- 3 tablespoon fresh mint leaves
- 3 tablespoon fresh coriander leaves chopped
Whole Spices
- 3 green cardamoms
- 3 cloves
- 1 black cardamom
- 1 small star anise
- ½ teaspoon cumin seeds
- ½ teaspoon black peppercorns
- ¼ teaspoon fennel seeds
- 1 small bay leaf
Instructions
- Wash and soak basmati rice in water for 20 minutes minimum.
How to make Mixed Vegetable Pulao in Open Pan
- Heat a wide pan with oil for tempering. When hot, throw in chopped chilies, ginger and all the whole spices. Sauté them until aromatic in a medium flame.
- To this hot tempering, now add the mixed vegetables and give it a good stir.
- Drain the basmati rice and add it to the pan and mix it well. Saute it for 2 minutes in a medium flame.
- Now to this add 2 cups of water. Add salt and squeeze juice of half a lime.
- When this comes to a boil, cover and cook in a simmer flame for about 15-20 minutes.
- By this time the rice would have absorbed all the liquid and cooked well. If not, let it cook covered for 2 more minutes.
- Add the fresh mint leaves and ghee (if vegan, substitute accordingly). Fluff up the rice. Take it off flame
- Serve it warm with a salad, yogurt and some crisps by the side.
Instant Pot Mixed Vegetable Pulao
- Switch on the instant pot in saute mode. Add oil, When hot, throw in chopped chilies, ginger and all the whole spices. Saute them until aromatic.
- To this hot tempering, now add the mixed vegetables and give it a good stir.
- Drain the basmati rice and add it to the instant pot and mix it well. Saute it for 2 minutes .
- Now to this add 1.5 cups of water. Add salt and squeeze juice of half a lime. Mix well.
- Add mint leaves and ghee (if vegan, substitute accordingly) on top. Cancel the saute mode, close the instant pot.
- Turn on Pressure cook for 3 minutes. Once done, let the Instant pot release pressure naturally for 6-7 minutes then do a quick pressure release.
- Open the instant pot and fluff up the rice. Serve it warm with a salad, yogurt and some crisps by the side.

One pot meals are indeed a blessing and love one pot pulaos. Pulao and some riatha on the side is a comforting meal for me. I follow similar recipe but do not add black pepper and fennel. I used it this time and loved the flavor fennel gives to rice.
