Burfi | Barfi | Indian Fudge
Barfi or burfi is a milk-based sweet from the Indian subcontinent with a fudge-like consistency. Its name comes from the Persian and Urdu word (barf) for snow.
There are many ways to make barfi. Like with condensed milk and milk powder or Sugar and milk powder. You can also use mawa to give the burfi richness. Add coconut along or any nuts or legumes to it and make a different variety. Check this sesame khoya ladoo or coconut rose ladoo made with rich mawa/milk solids.
A simple barfi recipe is made with milk powder and condensed milk, along with a touch of cardamom or saffron for added flavor. The mixture is cooked until it reaches a fudge-like consistency, then gently spread on a greased plate and cut into desired shapes.
It can also be shaped in to cute little balls or flattened into thick discs, like these simple milk peda. And for extra special occasions, give them a touch of elegance by decorating with shimmering silver or gold foil.
About the Recipe
This sinful chocolate fudge, is a decade old recipe from the blog. I m rewriting this with better content to get the reach it deserves. You know google makes life of a blogger tough every day, new updates almost every week and we are flabbergasted on what to do and what not to do. But again, this passion of food, keeps us going, so here i m trying to make my reach amongst all the tantrums thrown by google child.
Every year, I make some sweets as a trial to know what everyone at home prefers and what to gift friends on festive occasions. One such trial was this soft and fudgey chocolate burfi. Needless to say, it was a hit with kids.
My boys obviously loved it, it was chocolatey, soft, melt in the mouth, and had no nutty bits. It would definitely be a hit at your place if you have kids like mine or even adults who enjoy such treats. With holi on the cards, i wanted to gift something for my friends and also to my husband's colleagues, so this year, chocolate burfi it is!

Chocolate Burfi | Chocolate Milk Powder Barfi | Using Microwave
Equipment
- Heavy based pan to make the fudge
Ingredients
- 1 cup milk Powder
- 2 tablespoon cocoa powder
- 200 grams condensed milk
- 2 - 3 tablespoon Milk
- 1 teaspoon vanilla extract
- 1 tablespoon ghee
Instructions
- Take milk powder and cocoa together in a microwave safe bowl. Whisk well to combine. The cocoa and milk powder should mix well.
- Now add condensed milk to it and mix well. The mixture will be very thick and will resemble like a dough.
- Now add milk to this and mix to get a gooey consistency. Add vanilla extract to this and mix well.
- Microwave the mixture on high for 1 minute, take it out, mix well and take it back to the microwave and cook @ high for another 1 minute
- The mixture will look all crumbly, but soft at this point. Add ghee to this and cook for another 30 seconds @ high. Take it out and let it cool for 10 minutes.
- At this point, you can grease your palm and make balls of it and make pedas.
- But i lined a flat plate with aluminum foil and transferred the mixture to it and spread it well and smoothed the top using a rolling pin. You can also use a parchment paper to do this.
- Let this rest for another 15 minutes. Cut them into squares and store in an air tight container.
- I prefer to store in the fridge. It will stay good in the fridge for 2 days. Since it is made of milk, i recommend not to keep it more than 2-3 days.
Notes
- Microwave power varies from brand to brand. So take care while cooking. But do not cook more than the given 2 minutes 30 seconds.
- If you feel the mixture is a bit dry and doesn't hold shape, add 2-3 teaspoon of milk mix well and proceed.
- This can be cooked on stove top also. Just mix everything and keep it on stove-top and keep stirring. When it all comes together without sticking to the bottom of the vessel, then it is time to transfer it to a flat plate and smoothen the top.
- You can add any chopped nuts of your choice to add some texture to the smooth fudge.
