Kheer, payasam or payesh is a popular Indian dessert made with milk and sugar, flavored with cardamom, saffron, and nuts. The grain added to the milk, makes the name of that kheer, we have rice kheer, poha kheer, carrot kheer, vermicelli kheer, vegetable kheer, fruits kheer, the list is as long as your imagination. It is typically served during festivals, celebrations, and special occasions.
With its creamy texture and various flavors like saffron and cardamom, payesh is a popular treat enjoyed by families for generations. The slow cooking of kheer helps in getting a thick and creamy pudding.
But now with the help of quick cooking techniques, payasam can be made in minutes. By adding condensed milk and double cream milk, you can achieve thicker and creamier payasam in less than half of its time it took our grandma’s to make.

How to make Paneer at home
- Boil 1.5 litres of Milk. Add juice of half a Lemon. Reduce the Flame and Keep Stirring the Milk, till it curdles and Whey separates.
- Add ½ Cup Ice Cubes to it and Switch it off. Drain the Paneer in a Cheese Cloth. The Whey water can be used to make Roti's.
How to make Chennar Payesh

- If making paneer at home, make accordingly and keep it ready.
- Boil milk in a heavy bottom sauce pan, let the milk reduce a bit. Scrap the sides of the pan, and mix in the heavy cream forming on top.
- When the 5 cups milk reduced to 4 cups, add condensed milk and saffron to this and mix well.
- Now add the crumbled fresh paneer to this sweet milk. Let this continue to be on heat for another 15-20 minutes.
- The paneer would nicely swell absorbing the sweet milk, take it off the heat. Garnish with nuts and serve either warm or cold.

Equipment
- Heavy bottom sauce pan to make the kheer
Ingredients
- 1.5 cups of paneer/cottage cheese i used homemade paneer, which i had in hand
- 5 cups of full fat milk
- 2 generous pinches of saffron
- 200 grams of condensed milk ½ a can
- ¼ cup of pistachios chopped
- few pistachios crushed to top while serving
Instructions
To Make fresh paneer at home
- I had homemade paneer, ready in my freezer, so i used it. In case if you want to make fresh paneer, then boil 1500 ml milk, squeeze a lime into it and keep stirring until the whey separates.
- Add few ice cubes, take it off heat. Use a strainer, with cheese cloth, drain the whey and let the paneer sit for 30 minutes and then use it in the kheer
Let us make Paneer Payasam
- In a heavy bottom saucepan take 5 cups of milk. Let it cook in a medium flame and come to a boil. When it starts boiling, reduce the flame to simmer and add saffron strands to it.
- Let the milk reduce to 4 cups, while it is reducing, remember to keep the flame simmer and stir often to mix the malai/cream that forms on top and the sides. In the mean time, crumble the paneer and keep ready
- When the milk reduces to 4 cups, add condensed milk and mix well. Let it continue to cook for another 10-15 minutes.
- Now add the crumbled paneer to this and mix well. Let this cook until paneer swells a bit absorbing the sweet milk/ras, about 15-20 minutes in simmer flame. At this time keep the pistachios ready and add it to the kheer.
- Let this be on the stove for another 10 minutes. Remove from fire and serve warm or chilled with some more pistachios on top.
