What is kalandha saadham? In Tamil, Kalandha means Mixed, sadam or saadham means Rice, so kalanda satham literally translates to mixed rice.
Kalanda sadam is a traditional South Indian dish that is made with rice, mixed with lentils or vegetables and a variety of spices. It is also served during special occasions and festivals, as part of the detailed feast otherwise called as vazhailai sapadu / feast on banana leaf.
Kalanda sadam, a simple dish is often accompanied with a dry curry usually a crispy done vegetable like potato or raw banana and a side of pickles, papadum and raita.
Today's Instant Puli Sadam
Puli sadam, a favorite recipe among tambrahms, is made by cooking tamarind extract with spices and salt to make a thick sauce called pulikachal. This sauce has a long shelf life and can be mixed with cooked rice to make a delicious meal.
Many kitchens have a supply of pulikachal, a thick tamarind sauce mixed with spices, along with instant spice powders like thengai podi and paruppu podi.
But today's instant tamarind rice mix needs just 10 minutes to make from start to end. And it makes an aromatic and flavorsome meal when mixed with cooked rice.
Such quick and easy rice mix recipes come pretty handy on days we don't have time to cook an elaborate meal. When eating out is not an option, it can be either health , money or time crisis.

Ingredients to Make Instant Tamarind Rice
- Main ingredients : Fresh coconut, dried tamarind, chilies, turmeric powder and salt are the main ingredients to make the masala paste
- For the Rice : I have used fluffy cooked basmati rice. You can use any short grain rice, cooked soft and fluffy to make this quick tamarind rice.
- Tempering : Indian food is elevated to another level with tempering. For this quick puli sadam, i have used mustard seeds along with crunchy chana and urad dal and peanuts. The regular ingredients like hing along with curry leaves are also used.
How to make Instant Puli Sadam

- Measure all ingredients needed for making the tamarind paste and take it in a mixer jar. Add enough water and grind it to a paste .
- Heat oil, in a heavy bottom pan, add the paste and saute it. All of the moisture and the raw aroma from the tamarind paste would evaporate and it will start coming together, following the ladle as you mix.
- Once the mixture start to give out oil, take it off the stove.
- To make tamarind rice, heat oil given for tempering in a wide pan, splutter mustard seeds, add chana dal, urad dal and peanuts along with chilies and curry leaves.
- To this tempting tempering, add cooked rice, mix it well. Now add the cooked rice to this, mix well. Check and adjust salt.
- Serve it warm with a dry curry and some papad. This tangy puli sadam makes a wonderful lunch box recipe.

Equipment
- Indian style mixie or any heavy blender
- heavy bottom pan
Ingredients
To Make the Coconut Tamarind Paste
- ⅓ cup fresh coconut pieces
- ¼ cup oil
- 4 green chilies
- 5 red chilies
- 2 teaspoon salt
- golf ball sized tamarind around 40-50 grams
- 1 teaspoon hing/asafoetida
- 2 teaspoon turmeric powder
To make Tamarind Rice
- 3 cups of cooked rice
- salt as required
Tempering
- 2 tablespoon oil
- 2 teaspoon mustard seeds
- 3 tablespoon chana dal
- 3 tablespoon urad dal
- 3 tablespoon peanuts
- 4 red chilies
- 2 sprigs of curry leaves
Instructions
Cook Basmati Rice
- I have used basmati rice to make this instant tamarind rice. To cook basmati rice, wash and soak basmati in water for 15 minutes. Cook in open pot by adding twice amount of water. When the rice is done, strain the excess water and keep it aside until use.
Let's make coconut tamarind paste
- Measure and keep all the ingredients needed for the tamarind paste ready on the counter.
- Take all the ingredients into a mixer jar, add ¼ cup water, and grind it to a fine paste.
- In a heavy bottom pan, heat oil mentioned in the ingredients for tamarind paste.
- When hot, add the ground tamarind coconut mixture to this hot oil and saute it in medium flame,
- The moisture in the paste has to evaporate fully and the paste would become thick and will start following the ladle as you mix.
- At one stage, it will leave out oil, take it off the flame at this stage. This will happen around 10-12 minutes of sauteing.
Lets make Tamarind Rice
- Heat oil given under tempering. when hot, splutter mustard seeds, throw in other tempering ingredients like peanuts, chana dal, urad dal, curry leaves and red chilies.
- When the dals turn golden brown, add the cooked rice to it and mix it well with the hot tempering.
- Add ¾ of the prepared tamarind paste to this and mix it well. Adjust salt.
- The amount of paste here, depends on how much tangy and spicy you want your tamarind rice. You can even all of the prepared paste, but i retained 2-3 tablespoon of tamarind paste to use it later.
- Serve this delish puli sadam with rice crisps and a side of potato fry. This ground tamarind spice paste can be refrigerated for a week.
