The Food Memory
The delicious sweet ragi adai, featuring today is my mom's specialty. I miss going home this year. Until 2019, July & august months would be my vacation, where i enjoy 5 weeks of bliss at mom's place. Everyday, I wake up to the smell of freshly brewed filter coffee or aromatic tiffen sambar made to pair with morning idly/dosai. This actually is a blessing for people, like me, who have to wake up early everyday and make their own coffee. Thanks to the virus and the travel restrictions this year, we are made void of these little pleasures.
Amma makes a variety of tiffen/snack using Ragi and Ragi Flour. One of them is this delicious Adai. During my stay, i try to record some of her specialty dishes, for myself and the blog. This sweet ragi adai and the savory ragi adai were made exclusively for my blog.
What is Ragi?
Ragi/nachini or finger millet comes under group of millets. Ragi flour, a powdered form of ragi grain. Millets, are a group of cereals which are mostly tiny in size, round in shape. There are about 6,000 varieties of millet throughout the world in different colors.
Ragi/nachini is known better to us than other millets. It is introduced as weaning food in babies. Like any other millet, ragi is gluten-free and rich in B vitamins, calcium, iron, potassium, magnesium, and zinc. Both my kiddos enjoy ragi malt made with cashewnuts. My personal favorite is, savory porridge with ragi, the best summer drink ever.
I love to include millets in our regular meal, i dont make it look like some diet food by cooking it separately. The Instant ragi dosa, one of our goto breakfast, whenever i run of out regulary idly batter. We love this Ragi dosa, made with whole ragi and urad dal.
How to make Ragi Sweet Adai

- To make ragi sweet adai, take ragi flour, cardamom powder, nuts powder in a large bowl, mix well together.
- Melt jaggery in water and strain for impurities. Add jaggery water little by little and make a soft dough.
- Divide the dough into ping-pong size balls. Pat them down on a banana leaf into a flat disc.
- Cook this flat disc on a hot tava, with ghee on both sides until one.

Equipment
- Bowl for mixing the dough
- Tava to cook the adai/pancake
- measuring cups/spoons
Ingredients
- 2 cups ragi flour/finger millet flour
- 2 cups powdered jaggery
- 1.5 cups water
- 4-5 pods cardamom, crushed
- 1 cup freshly grated coconut
- 10 nos almonds, powdered
- 10 nos cashew-nuts, powdered
Instructions
- Boil 1.5 cups of water, add the powdered Jaggery to it. Let the jaggery melt. Strain for impurities and keep aside, let it cool until use.
- Take the ragi Flour in a large bowl. add the powdered cardamom, powdered nuts, grated coconut, Mix well
- Add the jaggery water, little by little and form a dough. The entire jaggery water might not be used for the dough, there might be a ½ cup of jaggery water left.
- Divide the dough into ping pong size balls. Using a banana leaf, pat the ball into a flat disc. Heat a tava, invert the banana leaf with the disc-side down on the hot skillet and peel-off the banana leaf slowly.
- Cook the adai on both sides, using little ghee. Serve Hot.
- Since it is a swee adai, this doesn't need any condiment, if you still want some, serve with some sliced banana and honey on the sides.
