We are baking a month long bake-a-thon starting from today. Bake-a-thon, is an yearly event, happening @ +Srivalli Jetti 's space. Though it is happening for the past 2 years, i decided to join the fun this year. The main reason why i m into this baking galore, is to put my Gas Oven into full use. Yup, i have a gas oven for the past 3 years that comes with my Indesit Cooking range. All these years, i used it as a storage, to keep my baking trays. Recently my Kenwood Microwave Convection Oven, my partner of 6 years, started to give trouble, so instead of trashing my partner and buying a new one, i decided to put the old fella into good use.
It was not an easy job at all. yup, i tried a tested recipe almost 4 times to check how it comes out. First time, the buns bottom were charcoal black, next time the buns top were still white, while the bottom was brown and third time. i was a bit successful with bottom, but the top was still white. All these times, I pestered my blogger buddies with 1000's of questions!! we have quite a few Gas Oven Master's in our Blogging Marathon Group and we are non-stop in Whatsapp!!! They were so patient to answer my teeny weeny doubts and encouraged me to try everytime i failed!!! At last, the fourth time, i was successful and got a beautifully browned and super delicious buns.
Here is the first recipe i tried and was successful and this goes to all my Guruji's +veena krishnakumar, +Varadas Kitchen +nalini suresh +Sandhya Ramakrishnan +Usha Rao who helped to bake successfully in my Gas oven. Thanks a ton guys!!!
Ingredients
2 cups Bread flour
2 teaspoon instant yeast
¼ cup sugar
½ teaspoon salt
2 tablespoon butter, softened
¼ cup yogurt plus a generous pinch of baking soda
½ cup warm milk
¼ cup tutti frutti
2 tablespoon milk for brushing the top of the buns
Method
- Add baking soda to yogurt and keep aside. Take Bread flour, instant yeast, sugar and salt in a large bowl and whisk well to combine.
- Now add tutti frutti to this and mix well to get uniform mixture. Add yogurt mixture this and mix well. Next add warm milk to this and start kneading the dough. When your halfway through, add butter and knead a soft pilable dough.
- Take the dough on a flat kneading surface and knead for 8-10 minutes, to get a smooth dough. you won't be needing any extra flour here, if you feel the dough is sticky, just grease your hands with little flour or butter and knead.
- Once kneaded, divide the dough into 8 pieces each weighing 80 grams approximately. Roll each into a ball by cupping into between palms and rolling it on a flat surface. Keep the rolled buns on a greased baking tray, I used big aluminium tray. Keep the rolled buns in a warm place to rise.
- I kept the tray inside my Oven with the lights on. Let it sit for an hour or until doubled.
- Preheat the oven to 220 C for 15 minutes. I used my gas oven for baking so i used my highest setting for preheating. Brush the top of the buns generously with milk.
- Once ready, put the tray in the middle tray and bake @ 220C for 15 minutes. Reduce the temperature to 180C and bake another 10 minutes. Once done, Let it sit for a minute in the oven, take it out and let it sit in the tray for another 2 minutes, then remove it on to a wire rack, let it cool completely.
- Enjoy warm, the buns stay fresh for a day on the counter, then i cling-wrapped and stored in the refrigerator. While serving, just reheat it for 20 seconds in a microwave and serve.
